<strong style="box-sizing: inherit;"><span style="color: orange;">Method : </span></strong><span style="color: #6a6c6e;">In a small frying pan over a medium heat and add the coconut, stirring until it browns. Then add the cumin, coriander and fenugreek seeds, the peppercorns and dried chillies. Continue to stirfry for 3 minutes. Then add the curry leaves. Stir for about 30 seconds then remove from the heat and leave to cool. Grind to a fine, slightly oily powder.</span></div>

Put a large pot on a medium heat and let it get hot, then pour in the oil. Drop in one whole green chilli. Stir and allow the skin to blister slightly. Then add the garlic and ginger. Fry for a couple of minutes, until the garlic just starts to brown. Tip in the onions and sauté until soft and golden. Now add the turmeric and the spice paste and mix thoroughly then cook for 2-3 minutes. Then add the tomatoes and cook, covered, for about 10 minutes. Stir occasionally, mashing the tomatoes into the sauce. Add the remaining green chillies, slit lengthways, and season with salt to taste.</div>

After giving this mixture a good stir add the chicken and brown the meat for about 10 minutes. Pour in a cup of water and stir well. Now add the coconut milk and coriander. Stir, cover and cook over a low heat for 35 minutes or until your chicken is cooked through and tender.<br />

Usually I do not post a write up about my recipes. This time the recipe is something very special and </div>
have some fond memories attached to it . One of my friends planned a get together at kumarakom last week. It was really exciting to spend two days with my childhood friends. we had so much to catch up. It was a road trip and while travelling one of them in the group suggested to have lunch from a restaurant attached to a toddy shop. I was skeptical about the food and the ambience as we were only ladies in the group. To my surprise the area was quite clean and we headed for the special lunch from there . They served us many varieties of fish and prawns. while going through the menu the person who served us told about this chicken curry . Without thinking much we orderd a portion. It was awesome, with coconut oil on top the curry was mouth watering. Method:<br />
wash and clean chicken .cut into medium size pieces.slice onions thinly. crush ginger garlic and green chillies.Grind dried red chillies , shallots, corriander seeds , pepper, and garam masala to a fine paste.<br />
Heat a pan add oil , splutter mustard seeds and fenugreek seeds. Saute onions slightly. Add crushed ginger garlic and chillies. Add few curry leaves and fry till the raw smell goes.Add vinegar and salt, Add ground masala and saute for a while. Now add chicken pieces.combine well to coat the masaa well on chicken pieces, Add water and boil .cover and cook till the chicken is soft. Now add fennel and cardomom . cook till the chicken is done and the oil leaves on top. Add few more curry leaves, switch off the flame . Serve hot with kerala dishes like Rice, Appam,or Puttu.</div>

Mutton - 250 gms<br />
Onion - 2 med size<br />

Method:<br />
Chop onions , green chilly , garlic and ginger thinly. chop tomatoes lengthwise.Clean mutton well and mix with 1/4 portion of the chopped onion , ginger and garlic. Add all powders except pepper powder.cook the mutton in a pressure cooker. Heat oil in a frying pan and fry the remaining onion, ginger , garlic , green chilly lightly. Now add tomatoes and curry leaves also. Fry for a minute and add the cooked meat into the pan.stir well . when the meat is completely dry, add pepper powder and mix well.check salt level. Add few curry leaves and remove from fire. Serve with rice or roti.<br />

Grind coconut with jeera. chop the leves . chop mangoes into med size pieces.Mix the boiled dal with leaves , mangoes and green chilly. Boil for a minute and add turmeric powder, salt , chilly powder .cover and cook till done. Add coconut paste and boil for a minute. Heat 1 tsp of oil in a pan , splutter mustard seeds, red chilly .Pour this over the curry. cover and keep aside. serve with rotis or boiled rice.</div>

Crush onions and red chilies lightly.<br />

Fry onions in 2tbsp oil till light brown and add salt, turmeric powder, green chilly, ginger, garlic , curry leaves and fry for a minute.<br />

Ingredients:<br />
11/2 cup all purpose flour<br />
1cup granulated sugar<br />
1/4 cup cocoa pdr<br />
1teaspoon baking pdr<br />
3/4tsp baking soda<br />

1/3 cup unsalted melted butter<br />
1cup warm water<br />
1tbsp lemon juice<br />
1tsp vanilla essence<br />

Method :<br />
Preheat oven to 180 degree C and place the rack in centre of the oven.In a bowl stir together flour, sugar, baking pdr, baking soda, salt and sifted cocoa pdr.<br />
Add melted butter, water, lemon juice and v . essence.With a fork blend all the ingredients together until well blended.<br />
Bake in a pre heated oven for about 30 mints.Or until a tooth pick insertedin the center comeout clean. Remove from the oven and place on a wire rack to cool.<br />

Ganache:<br />
170 gm dark chocolate chopped<br />
3/4 cup heavy cream<br />
1tbsp unsalted butter<br />
<span style="font-family: "arial";">Place the chopped chocolate , cream and butter in a heat proof bowl. Place over a sauce pan of simmering water and melt until smooth.Remove from the heat and stand at the room temperature until it is of pouring consistency.Then pour this over the cooled cake. Let stand until ganache has thickened.</span><br />

1. In a double boiler, melt chocolate.<br />
2. In a medium mixing bowl, beat Eggs and Sugar until light and fluffy.<br />
3. Once chocolate is melted, remove pan from heat and add in butter. Mix until the butter melts fully.<br />
4. Add chocolate/butter mixture into the eggs, add all-purpose flour and mix until well incorporated.<br />
5. Butter bottom and sides of ramekins (small glass/porcelain bowls) and pour in mixture about 3/4 way full.<br />
6. Place ramekins on a baking tray and bake at 350 degrees Fahrenheit (180 C) for 10 – 15 minutes. Shorter for gooey (molten) inside, longer for stiff inside.<br />
7. Serve hot with vanilla ice cream.</div>

Method :<br />

Grease the ramekins.<br />
In a bowl mix egg, sugar , coffee and salt. Mix with an electric mixer for about 2 mints.<br />
Break chocolate into small pieces .place the chocolate and butter in a microwave safe bowl.microwave on high for 20 seconds increments. stir after each until melted completely.Let it cool slightly.<br />
Add the chocolate mixture to the egg mixture. whisk to combine.<br />
Now add flour and whisk just to combine. Do not over mix.<br />
Pour the batter into the prepared ramekins.<br />
Bake until a tooth pick inserted half inch from the edge of the ramekins comes out clean and a tooth pick inserted in the centre comes out wet.(10 to 12 minutes.) Do not over bake.Cool 10 minutes on a wire rack.Run a knife around inside the ramekins to loosen .Invert the cake into a serving plate.Dust with some sugar and enjoy!!!<br />

Method :<br />
Sift together flour . soda bicarb, salt and cocoa pdr. Method :<br />
Preheat oven at 180 degree C. grease the baking tin with butter .<br />
sieve together flour , baking powder and salt twice and keep aside.<br />
In a mixing bowl with an electric mixer cream butter and sugar until light and fluffy.<br />
Add egg one at a time ,beating until thoroughly mixed .<br />
with the mixer on low speed add flour mixture and mix until blended.<br />
Now add milk and vanilla essence and mix well.<br />
Mix cocoa powder in 2 tbsp of hot milk and add into 1/4 th portion of the batter.<br />
Using 2 large spoons alternate placing large spoonful of vanilla and chocolate batters in the prepared cake pan. Repeat alternating the flavours making about 3 to 4 layers.<br />
Firmly tap the pan on the counter to level the batter. Using a butter knife zig zag the knife through the batters to swirl.<br />
Bake for about 30 to 40 minutes or until a tooth pick inserted comes out clean.<br />

Wash and chop tomotoes into big pieces.<br />
Heat oil in a pan and Splutter fennel seeds.<br />

Pre heat oven to 175deg C.</div>

Grease and flour 8 inch square pan.In a large sauce pan melt butter . Remove from heat and stir in sugar.</div>

Add vanilla essence and mix well.Now add eggs and beat until well mixed.In a bowl mix flour , cocoa powder , baking powder and salt.stir well and add to the egg mixture.Beat nicely till blended.</div>

spread the batter into a prepared baking tin.Bake in a preheated oven for 25 to 30 minutes.or if a tooth pick inserted to the center comes out with little batter. Do not over bake .Let it cool for 15 minutes then transfer to a wire rack and cool completely.</div>

Kanni manga :- 1/4 kg<br />
Chilly powder :-3 tbsp<br />
Mustard seeds :-2 tsp crushed<br />
Fenugreek powder :- 1/2 tsp<br />
Asafoetida :- 1/4 tsp<br />
Gingely oil :-3 tsp<br />

Wash and clean small mangoes with its stalk. Drain the water completely and pat dry with a clean towel.<br />
Mix salt with mangoes in a bottle or Bharani ( ceramic Jar ). and cover the lid with a cloth nicely and tie it up.Leave it like that for about 15 days. In between open bharani on the 3rd 5th 6th and 8th day and stir well with a dry wooden ladle and close tightly . Now when you open the bharani on the 15th day the mangoes should look wringled and lose the green colour to a pale yellow.<br />

Transfer the mangoes into a clean vessel .Dry roast all powders and crushed mastard seeds slightly and mix with the brine in the bharani.Mix well and add the mangoes . Heat gingely oil and once cooled pour it over the mango pickle.Place a white cloth dipped in oil on top and cover with the lid . (should be tied up with a cloth over the lid ) Keep the jar in a dark place . After 3 months open it and mix well.Mouth watering achar would be ready . Serve them with curd rice or any type of boiled rice.<br />

Point to note :-<br />
You can add boiled and cooled water to get more gravy.But adding water will decrease the shelf life of the pickle.so it is better to use just the brine .Always use clean and dry spoon to serve the pickle.<br />

Mix curd with salt ,ginger garlic paste,tandoori masala,chilly powder,turmeric powder,corn flour.. Apply this paste on vegetables and paneer pieces .Keep aside for marination for about 30 minutes.<br />

After 30 minutes, apply oil to the vegetables and paneer pieces.Pre- heat the oven for 10 minutes.Place them on a baking tray and bake at 180dgree C for 20minutes.<br />
Serve hot with mint chutney .<br />
