Garlic chicken

Ingredients:
500 gms boneless chicken pieces cut into small pieces
1/2 cup spring onion shredded
1 large onion sliced
1tbsp chopped garlic
4 tbsp chilly oil
1/2 cup celery shredded
1tbsp soya sauce
For the marinade:
2 tbsp soya sauce
2tbsp cornflour
2tbsp rice wine or sherry (opt)
salt to taste
a pinch of colour orange red.
1/2 tsp pepper powder
1/2 tsp ajinomotto (opt)
1 tsp ginger paste
15 cloves garlic made to paste

for Chilly oil:
2cups refined oil
4tbsp red chilly powder
1' piece ginger crushed
method:
1.Heat the oil but do not let it smoke.
2. add crushed ginger .remove from the fire.
3. add chilly powder and keep aside to cool.
4. strain oil through a thick cloth . oil should be red in colour. This oil can be stored for a month at room temperature.

method of preparation:

1. combine all the marinade ingredients and marinate the chicken pieces for 2 hrs or keep overnight in the fridge.
2. heat chilly oil , add the chicken pieces and stir fry till brown.Remove and keep aside.
3. Add the slice onion and garlic and fry for 5 seconds.then add celery and spring onions and fry for another 5 seconds.Add the left over marinade and soya sauce.when it boils add the chicken pieces and toss well. serve hot.
