Eggless Vanilla Sponge Cake






Ingredients:
Maida 1 1/2 cup
Granulated sugar 3/4 cup
Vanilla essence 11/2 tsp
Baking soda1/2 tsp
Baking powder 1 1/4 tsp
Milk 1 tbsp ( only for brushing the top )
Curd 1 cup
veg oil 1/2 cup


             

Method:Sieve maida twice and keep aside.In a bowl mix curd and sugar until the sugar dissolves completely.Add baking pdr, baking soda to the mixture and mix well.Leave it like that for 5 minute. When the bubbles starts forming, add v. essence, cooking oil and mix well.Now slowly add maida and mix with wet ingredients.whisk until it changes to creamy and thick mixture.Pre heat oven to 200 degree C for 10 minutes.Pour the batter to a greased baking tray and bake for about 30 to 35 minutes.



Brush the top of the cake with milk10 minutes  before  taking out from the oven to get a polishing glaze.Allow the cake to cool for few minutes, then invert to a wire wrack and cool completely.Slice them into  pieces . Enjoy the yummy slices!

Eggless chocolate cake





Ingredients:
11/2 cup all purpose flour
1cup granulated sugar
1/4 cup cocoa pdr
1teaspoon baking pdr
3/4tsp baking soda
1/4 tsp salt
1/3 cup unsalted melted butter
1cup warm water
1tbsp lemon juice
1tsp vanilla essence

 Method :
Preheat oven to 180 degree C and place the rack in centre of the oven.In a bowl stir together flour, sugar, baking pdr, baking soda, salt and sifted cocoa pdr.
Add melted butter, water, lemon juice and v . essence.With a fork blend all the ingredients together until well blended.
Bake in a pre heated oven for about 30 mints.Or until a tooth pick insertedin the center comeout clean. Remove from the oven and place on a wire rack to cool.

Ganache:
170 gm dark chocolate chopped
3/4 cup heavy cream
1tbsp unsalted butter
Place the chopped chocolate , cream and butter in a heat proof bowl. Place over a sauce pan of simmering water and melt until smooth.Remove from the heat and stand at the room temperature until it is of pouring consistency.Then pour this over the cooled cake. Let stand until  ganache  has thickened.

Dark chocolate cake with vanilla butter cream frosting

Ingredients:
All purpose flour : 1 3/4 cup
Sugar :2 cups
Cocoa powder : 3/4 cup
Baking powder : 11/2 tsp
Baking soda : 1 1/2 tsp
Salt : 1tsp
Egg  : 2
Milk : 1 cup
Vegetable oil : 1/2 cup
Vanilla extract : 2 tsp
Boiling water : 1cup


 Method:
Heat oven to 350 degree F.Grease and flour Baking pan.In a large bowl combine sugar, cocoa powder, flour, salt, baking powder and baking soda.Add eggs, milk, oil and vanilla.Beat on medium for 2 mints.Stir in boiling water. (batter will be thin.) Pour into the prepared pan and bake for 30 to 35 mints or until a wooden tooth pick comes out clean.Set aside to cool completely.



 For the vanilla butter cream frosting :
Butter : 6tbsp
Icing sugar : 2 2/3 cup
Milk 1/3 cup
vanilla : 1tsp


Method:
cream butter and blend in sugar alternatively with milk.beat to spreading consistency. Blend in vanilla essence and the frosting is ready!!Once the cake is cool frost with butter cream and decorate with some chocolate shavings .

Chocolate Lava Cake





Prep Time: 20 mins
Cook Time: 10-15 minutes
Serves: 4-6
Ingredients:
Semi-Sweet Baking Chocolate – 4 oz (113g)
Butter – 4 oz (113g)
Eggs – 2
Sugar – 1/3 cup (75 g)
All-purpose Flour – 1/4 cup (40g)
Butter – for greasing ramekins






Method:
1. In a double boiler, melt chocolate.
2. In a medium mixing bowl, beat Eggs and Sugar until light and fluffy.
3. Once chocolate is melted, remove pan from heat and add in butter. Mix until the butter melts fully.
4. Add chocolate/butter mixture into the eggs, add all-purpose flour and mix until well incorporated.
5. Butter bottom and sides of ramekins (small glass/porcelain bowls) and pour in mixture about 3/4 way full.
6. Place ramekins on a baking tray and bake at 350 degrees Fahrenheit (180 C) for 10 – 15 minutes. Shorter for gooey (molten) inside, longer for stiff inside.
7. Serve hot with vanilla ice cream.

Molten Lava cake


 Ingredients:
4 tbsp (60gm ) Butter
2/3 cup ( 80gm ) sugar
3 eggs
120 gm (4 ounces ) semi sweet chocolate
pinch of salt
2 tsp instant coffee
6 tbsp all- purpose flour




 Method :
Pre heat oven to 180 degree C.
Grease the ramekins.
In a bowl mix egg, sugar , coffee and salt. Mix with an electric mixer for about 2 mints.
Break chocolate into small pieces .place the chocolate and butter in a microwave safe bowl.microwave on high for 20 seconds increments. stir after each until melted completely.Let it cool slightly.
Add the chocolate mixture to the egg mixture. whisk to combine.
Now add flour and whisk just to combine. Do not over mix.
Pour the batter into the prepared ramekins.
Bake until a tooth pick inserted half inch from the edge of the ramekins comes out clean and a tooth pick inserted in the centre comes out wet.(10 to 12 minutes.) Do not over bake.Cool 10 minutes on a wire rack.Run a knife around inside the ramekins to loosen .Invert the cake into a serving plate.Dust with some sugar and enjoy!!!



Mug Cake












Ingredients:
Flour : 3 tbsp
Cocoa powder :2tbsp
Sugar :4tbsp
baking powder : 1/4 tsp
Milk : 2tbsp
Egg : 1
Oil :2tbsp
vanilla essence : 1/2 tsp
Method :
In a mixing bowl combine cocoa powder , flour, sugar and baking powder. Mix well. Add milk , egg , oil and vanilla essence. Mix until smooth.Pour into a greased microwave safe mug( only half fill the mug ) and microwave on high  for 90 seconds. watch it rise as it cooks!Allow to cool for few minutes.
Either eat out of mug or tip on to a plate and enjoy with fruits or ice cream...

chocolate cake



Ingredients :

Maida: 1/2 cup
Cocoa powder : 1.2 cup
Salt : a pinch
Soda bicarbonate :1 1/4 tsp
Vegetable oil : 2/3 cup
Buttermilk ( not too sour without lump ) : 1 cup
Vanilla essence : 1tsp
Eggs :2
Sugar : 1 1/2 cup



Method :
Sift together flour . soda bicarb, salt and cocoa pdr. Add oil buttermilk and vanilla. beat until it forms a smooth batter.In a separate bowl beat egg until thick and foamy.Gradually add sugar and beat until well blended.Fold the egg and sugar mixture thoroughly into the batter. pour into a greased baking tin and bake  at 180 dgree C for about 30 mints or  till done .cool cake tin  on a wire rack for 20 mints and then transfer the cake to a wire rack to cool completely. .Decorate with chocolate frosting .

For Frosting :
1/2 Cup butter softened
3 cups powdered sugar
1/2 cup cocoa powder
1 1/2 tsp vanilla essence
5 tsp luke warm milk

Method;
using an electric mixer cream butter and add powdered sugar gradually . mix well . Now add cocoa powder an combine well. Add milk and vanilla essence and beat until it becomes to a spreading consistency.spread generously over the cake and enjoy!!

Marble cake





Ingredients :
All purpose flour : 11/4 cup
Butter : 1/3 cup
Sugar :1cup
Egg : 2
Cocoa powder :2tbsp
baking powder : 2tsp
salt : 1/2 tsp
vanilla essence : 1tsp
Milk 1/2 cup + 3tbsp hot milk

Method :
Preheat oven at 180 degree C. grease the baking tin with butter .
sieve together flour , baking powder and salt twice  and keep aside.
In a mixing bowl with an electric mixer  cream butter and sugar until light and fluffy.
Add egg one at a time ,beating  until thoroughly mixed .
with the mixer on low speed add flour mixture and mix until blended.
Now add milk and vanilla essence and mix  well.
Mix cocoa powder in 2 tbsp of hot milk and add into 1/4 th  portion of the batter.
Using 2 large spoons alternate placing large spoonful of vanilla and chocolate batters in the prepared cake pan. Repeat alternating the flavours making about 3 to 4 layers.
Firmly tap the pan on the counter to level the batter. Using a butter knife zig zag the knife through the batters to swirl.
Bake for about 30 to 40 minutes or until a tooth pick inserted comes out clean.
place cake pan  on a wire rack to cool for half an hour and then transfer from the pan  to a cooling rack to cool completely.

Brownies with frosting

Ingredients:
½ cup  Butter
1cup Sugar
2eggs
1tsp vanilla extract
1/3cup unsweetened cocoa powder
½ cup Flour
¼ tsp salt
¼ tsp baking powder


Method:-

Pre heat oven to 175deg C.
Grease and flour 8 inch square pan.In a large sauce pan melt butter . Remove from heat and stir in sugar.
Add vanilla essence and mix well.Now add eggs and beat until well mixed.In a bowl mix flour , cocoa powder , baking powder and salt.stir well and add to the egg mixture.Beat nicely till blended.
spread the batter into  a prepared baking tin.Bake in a preheated oven for 25 to 30 minutes.or if a tooth pick inserted to the center comes out with little batter. Do not over bake .Let it cool for 15 minutes then transfer to a wire rack and cool completely.


For the frosting you need :-
3 tbsp butter softened
3 tbsp unsweetened cocoa powder
1tbsp honey
1tsp vanilla extract
1 cup confectioner sugar
 2 tbsp milk


 Method:

In a bowl beat butter, cocoa powder, honey and vanilla essence  well.Add sugar and milk and beat till you get a spreading consistency.Frost brownies still they are warm. Cut itno squares and serve with a glass of milk and enjoy!!!

Choco Coffee Cake



Ingredients :
All purpose flour : 300gms
Baking powder : 1 1/4 tsp
Butter : 1 tbsp
Sugar : 350 gm
Vanilla essence : 1/2 tsp
Condensed milk : 1 tbsp
Milk : 375 ml
Cocoa powder ; 1 tbsp
Instant coffee powder : 2 tbsp



Method:
Seive together flour,cocoa powder, coffee powder, and baking powder. Mix well and keep aside.
In a mixing bowl add milk, butter, condensed milk,sugar and vanilla essence.Mix well.
Once the sugar is dissolved completely, add seived maida mixture little by little and mix well.
After mixing well you will get a creamy mixture without lump.
Pre heat the oven at 180 degree C for 10 mints.

 Pour the batter into a greased baking tin and bake for 35 to 40 minutes or until a toothpick inserted come out clean. Cool on a wire rack.After 15 minutes invert the tin, the cake will demould perfectly.Once cooled completely,  frost with chocolate frosting or serve with a dollop of whipped cream or chocolate sauce.

 For chocolate frosting :
125 gm cooking chocolate
125 gm unsalted butter
Melt the chocolate and butter in asmall pan over a pot of simmering water and beat with a wooden spoon until smooth.Pour this over the cooled cake and spread smoothly with a fork.

Sponge Cake


 Ingredients:
Maida :1cup
Egg     : 3
Lime juice :2tsp
Baking powder :1tsp
Sugar ( powdered) :1cup
Hot milk : 9 tbsp






 Method :
Whisk the whites of the eggs till it forms peaks. Beat the yolks separately and then add to the whites. Beat in the sugar little by little. Then add the lime juice  too. Sieve maida with the baking powder and fold dthis into the egg and sugar mixture alternately with the hot milk. pre heat the oven for 10 minutes.Pour into a greased baking tray and bake in 180 degree C for 40 minutes.Insert a tooth pick and if it comes out clean your cake is ready. Cool it on a cooling rack.Once it is cooled slice into small pieces and serve
