Kerala Sambar is different from the typical Sambars made in the other South Indian states. Kerala Sambar is made using a mixture of different vegetables whereas the other sambhar is made using a single vegetable. It is an excellent curry with rice or with idli and dosa.
Ingredients
Sambar Dal
1/4 Kg
Potato
2 peeled and cut into pieces
Large Onion
3 cut into pieces
Brinjal
2 small diced
Ladies finger
3 diced

1/2 Kg diced
Drumstick
2 cut into pieces

Tomato
3 cut into pieces
Chilly powder
3 tsp
Turmeric powder
1/4 tsp
Asafoetida powder
1/4 tsp
Oil
2 tsp
Mustard seeds
1/2 tsp
Curry leaves
2 sprigs
Coriander leaves
2 sprigs
Tamarind
small piece

Method
First make tamarind water by putting a small piece of tamarind in 1/2 cup water and mix well using hands and keep aside.
Cook the sambar dal for 5 mts in a cooker and keep it aside. Then cook the diced vegetables except for ladies finger and tomato,with salt ,2 tsp chilly powder and turmeric powder.when done, add tamarind water ,ladies finger and tomato.boil for a minute .Mix the cooked dal and vegetables together with water as desired.Stir and simmer on low flame for some more time and add more salt if needed. Add chopped coriander leaves and and sprinkle asafoetida powder and simmer for 2 more minutes. Remove from flame and keep aside. Heat oil in a wok and allow mustard seeds to splutter. Add shallots, red chillies and curry leaves and fry for a minute. Mix in the sambar powder,1tsp coriander powder and 1ts pchilly powder and fry for 2 minutes on low flame. Now pour the sambar to the wok and mix well for a few minutes. Remove from flame .

Sambar Masala is a mixture of the following:
Grated coconut(optional)fried and ground along with Red chilly powder, Coriander Powder, Cumin powder, Turmeric powder, Fenugreek powder and
asafoetida.
