Ingredients:
1Cup Pineapple diced
8 to 10 black seedless grapes
1/4tspturmeric powder
1/4 tsp chilly powder
1 tspSugar
salt to taste.
For grinding:
1/2 cup grated coconut
1 green chilly
1/4 tsp mustard seeds
1/4 tsp jeera
1/4tsp turmeric powder
For seasoning:
2 Tsp coconut oil
1/2 tsp mustard seeds
2 dry red chillies
5-6 curry leaves
Method:
Grind grated coconut, jeera , mustard seed, turmeric powder and green chilly to a fine paste adding some waterand keep aside.(add mustard seeds at the end or crush them separately.)
In a small sauce pan add some water and cook pineapple chunks with turmeric powder,chilly powder and salt to taste.when the fruit is cooked add the whole grapes, close the lid and cook on a low flame.Just before the grape juice mix into the gravy add coconut mixture and cook till it starts boiling.Adjust the salt and mix everthing well and for sweetness add 1tsp sugar and turn off the stove.
In another pan heat oil and splutter mustard seeds , red chillies and turn off the stove and add curry leaves and pour it over the dish.close the lid and let it rest for a couple of hours ,allowing all the fruit flavours to mix with coconut mixture and oil .
(Note: this dih takes time to blend all the flavours , so give enough resting time before serving .And while cooking pineapple you can add a banana also to make the dish more sweeter.)
