Ingredients:
Shredded carrots : 2 cup
Milk : 2 cup
Unsalted butter : 3 tbsp
Sugar : 1/2 cup
Cardomom powder : 1/2 tsp
Chopped & roasted Cashewnuts : 10
Method :
1. Boil milk on a medium high heat in a pan until it is reduced to about 1 cup.Stir in between to ensure the milk does not get burnt at the bottom of the pan. set aside.
2. Melt butter in a frying pan, add shredded carrot and stir fry for about 7 to 8 minutes on a medium flame.
3.When carrot becomes tender and changes the colour, add milk and cook till dry.
4. Add sugar and cardomom powder and stir fry until halwa starts to leave the side of the frying pan.
5. Garnish with cashew nuts.Once cooled cut into desired shapes and serve .Or you can have this warm with a good scoop of vanilla ice cream ..
