A popular speciality , you will enjoy cooking this combination in the microwave,it cooks quickly without addition of water or loss of nutrients , the cottage cheese becomes soft and moist and the dish itself looks a very appetising bright green with white .Try it !
Ingredients :
500 gms spinch chopped and washed
1 1/2 tbsp oil
3/4 tsp cumin
1 large onion choped
1' ginger chopped
3 cloves garlic crushed
2 tomatoes chopped
green chillies to taste, chopped
a pinch turmeric
250 grm paneer cubed
1 tbsp butter or cream
Method :
1. Put the spinach in a microwave safe bowl.cover and microwave on 100% power for 6 minutes.Stand three minutes&blend either totally smooth or to a knobbly pureee.
2. Into the same dish , put the oil and microwave 100% for 2minutes.Drop in the cumin and continue to cook at the same power for 1 minute .Add onion ,ginger, and garlic and cook 4 minutes.The mixture will be very fragrant.
3.Add the tomatoes and chillies .Cook for 5 minutes or till the oil starts to separate.
Add turmeric and cook for another 30 seconds.
4.Stir in the pureed spinach and Paneer and Microwave at 60% power for 5 minutes .
5. Stir in the butter or cream before serving .
(Serves 4-6)
Handy Hint:
You may do step 1 any day you have some free time and freeze it for use on another occassion .
