Uluvayila (Fenugreekleaves) & Egg Thoran

 Ingredients :
Fenugreek leaves : A bunch
Egg : 2
Coconut : 1/4 cup( Grated)
Green chilly : 2
Pearl onion : 4
Turmeric powder : 1/4 tsp
Red chiily powder :1/2 tsp
Pepper powder : 1/4 tsp
salt as req

Oil : 1 tbsp
Mustard seeds : 1/4 tsp
Urad dal : 1/4tsp
 Dry red chilly : 2
Curry leaves . few.











Method:
Pluck the leaves from the stem, wash thoroughly and chop them and keep aside.
Crush coconut along with Green chillies and pearl onions.
Beat egg with salt and pepper powder.
Heat oil in a cheenachatti/ kadai and add mustard and urad dal. when splutter, add red chilly and curry leaves
Add crushed coconut , turmeric powder,  and chilly powder  and saute for few seconds.
Add  Uluvayila and combine well.Add salt to taste and  cook with a lid on for 2 mints.
Remove the lid and make a small space in the centre to add the egg batter.Stir well .
when the egg is done combine well with the leaves and saute for 2 to 3 mints.
Serve hot with Rice and Curry .
